Can you tell me which is better and why? M-Audio Oxygen 61 (3rd gen) MIDI Keyboard or the Korg MicroKey 61-Mini Key MIDI/USB controller?

It's a difficult question to answer as both keyboards have their merits so it really comes down to what you as an individual want the keyboard to do.
They are both 61 keys but the Korg has the Micro Keys compared to the full sized keys of the M-Audio. For me I would prefer full sized keys as I find them easier to play.
The Korg is smaller and so can fit in a smaller space which maybe useful if working to small parameters or if it is needed to be transported regularly.
The Oxygen has knobs and faders that can be assigned to different parts of the synthesiser within the plug-ins you use. This can be quite useful if doing a lot of synth based work as it gives you the freedom to manipulate certain aspects of what you are recording while you are recording it, such as the cutoff filter or resonance.
There are some other minor differences and individual features to them but the above are the main differences between them and the things I would look at when choosing a MIDI keyboard.
If you were to ask my personal opinion then I would go with the M-Audio Oxygen because it has full sized keys and with the faders and knobs you have more control and options for manipulation should you need it.
